Chocolate Mousse

If you like us and enjoy to entertain with something sweet then you will want to make this recipe part of your basic repertoire. We like it with dark chocolate, however if you prefer a lighter milk chocolate then just replace the dark chocolate with equal amounts of Lindt Milk Chocolate (Lindt Swiss Classic, Excellence Extra Creamy).

 

Ingredients

  • 3 bars (3.5oz/ 100g each) Lindt Excellence 70% Cocoa
  • 1 Tbsp (15g) Butter
  • 2 Tbsp (30 ml) hot Water or Red Wine
  • 1 Tbsp (15 ml) Orange Liqueur
  • 2 cups (475 ml) Heavy Cream
  • 4 Egg Yolks
  • 1/4 cup (50g) Sugar

Directions

  1. Melt the chopped chocolate and butter.

  2. Add the hot water and orange liqueur to the chocolate and stir to form a smooth paste. Set aside.

  3. In a separate bowl, whip the heavy cream until just barely firm. Set it aside in the refrigerator.

  4. In a separate bowl, whip the egg yolks and sugar

  5. Add the chocolate to the egg yolks and stir until combined.
    Carefully fold in the whipped cream.

  6. Pour into a bowl or individual serving cups, cover with plastic wrap, and refrigerate a minimum of 6 hours or overnight. Garnish with white chocolate curls.

    WINE PAIRING: full bodied Cabernet Sauvignon or  jammy Zinfandel

    Interseting - with the droplets of red wine included. I am thinking it would give it a little (boozy?) depth. I am never sure about raw egg yolks these days - in the olden days - I would do them with abandon! Love using some rich, dark chocolate in this. Definitely.

    Corina did use Zinfandel instead of water and it gave a truly delicioius aroma. You right about the eggs Claudia, so we try to purchase them really fresh from the Farmers Market.
